About this wine

Classic Cuvée is the wine we make the most of and the one we are proudest to pour first. It is a blend of all three traditional sparkling grapes from across the estate: Chardonnay from the upper chalk for lift, Pinot Noir from the 1979 block for body, and a little Pinot Meunier for the soft, bready note that makes it easy to drink on its own.

Each year we keep back around a fifth of the base wine as a reserve, so every bottle carries something of the vintages before it. That is what keeps it consistent from one release to the next, even after a cold English summer.

It spends a minimum of 36 months resting on its yeast in our cellar before we riddle and disgorge it by hand, in batches of 600. The disgorgement date is printed on the back label, so you can see exactly how long yours has had to settle.

“We came for the hour-long tasting and stayed three. The Classic Cuvée is better than the Champagne we brought to our wedding, at half the price.”
Harriet P., Winchester, after a cellar-door tasting
